I personally have not painted RJT but my understanding is that it is a 3 stage process. Your shop may be quoting you for blending the fascia and fenders which is the proper way for a perfect job....

On the underside of the hinge there is a rubber snubber with a 7 mm headed bolt under it. You can adjust your height this way more precisely. Usually I need to raise both corners about 1/16

Being in Florida, I would suggest just getting the heat out.

Our hoods have a bit more of a V'eed peak to them than the standard hood. This might account for the corners wanting to be up a bit

Make sure you set it far back enough so you do not have to cut into the bracing on the underside front of the hood. This would work best with our COPO style hood, don't remember what style underside...
