I wonder how much of a factor our 20" wheels play in availability. My gut feeling is there just aren't that many cars with 20"ers so less interest on the part of the tire manufacturers to produce...

I wouldn't go any lower than 1.25. Keep in mind the 1LE/ZL1 wheels and tires are shorter than the stock Pirellis, plus if you add long tube headers you're pretty close to the ground.
