What kind of gaskets are they? If they are poor quality/cheap (paper?) it could be an issue. Can you use new OE gaskets?

Removing the cat will "show" the car as running richer, not leaner. Which further points to exhaust leak prior to the O2 sensor the car is getting its readings from.

I would guess exhaust leak causing it to read lean. AFR is measured before the cat on the stock narrow band sensors, which will throw the code, so lack of cat is not throwing it off.
