It's not the ducts on the ZL1 that allows it to out brake the GT500. It's the fact that all Mustangs come with single piston rear calipers. Also, the ZL1 ducts aren't that effective as they only bring air to the wheel well, not directly onto the rotors where cooling is needed the most.
