The L79 doesn't list any manual transmission.
The LS3 and LS7 list the Tremec TR6060
the MM6 is rated for 500lb-ft
the 6L85M (MZ6) is also a TR6060 box but is rated for 428lb-ft
The sixth-generation Corvette with the Z51 option uses the MZ6 version of the six-speed, with ratios developed for the M12 which was used in the Cadillac CTS-V. These ratios are higher in first, second, and third gears than the MM6, as well as a lower-ratio fifth gear to increase top speed for the Z51 option.
The TR6060 is the direct replacement for the T56.
As far as feel goes... I would probably expect more of the same.

As for the shifter feel in a Mustang GT I can concur that it feels like shifting a truck
I got a feeling we won't be disappointed in the manual tranny of the V8 Camaro though.
