Antifreeze

So I'm changing the antifreeze in my '67 with a 454 in it. There was a little more than 2.5 gallons that came out. How much new antifreeze should I put in? Is 1 gallon of antifreeze enough for 1.5+ gallons of waters (40% antifreeze/60% water)? Or should I make it more 50/50?

I wouldn't think that would matter much. I believe that the antifreeze also helps keep things from rusting up and is also a lubricant.?.?
