Is it okay to use Guard and Gloss with a chamois?

The word 'chamois' makes me shudder. I would just use a nice, plush, microfiber towel.

It is best to just lose the word "chamois" from your vocabulary when it comes to detailing. Get yourself a nice waffle weave towel from Adams Polishes or Microfiber Madness. Not only is it much safer to use, but you will find your drying time will be much faster which it turn reduces the chances for water spots. Its a win-win all around.

Definitely do not use a chamois.
 It will be worth your while to invest a few bucks in some quality (with emphasis on quality) microfiber towels.
