Big fan of 1/18. I have an obscene collection of Motogp 1/18 scale bikes and about 10 sports cars. Still cannot find a black LT1.

You won't find one. Generally speaking, they only make the V8 powered models, and even then, it's the more common ones like the SS and ZL1.

I've never seen a 4cyl/6cyl model Camaro toy car.

You'll have to settle most likely for a basic black SS model.

Would love to find a Red 2020+ SS 1LE in ANY size. But I have never seen one.

Sadly that seems to be the case. I would love to see an LT1 since it has the same 6.2 V8 but has a very different nose different from all the SSs and ZL1s. If anyone ever sees one, let me know!
