Coolant temp......

Sorry if this is not the right place to post this. But I noticed today that my coolant temp was fluctuating between 203-219° today in stop and go traffic. It was only 55° here in Chicago. Isn't that a bit high for the coolant? I know when it's cold below 32° it gets to 181° at the highest!

no, thats pretty normal when there's no air moving through the radiator. If it was getting that warm running down the road you'd have a reason to be concerned but not sitting still or in traffic. Fan should kick on high around 220 and bring it down.

So if I'm driving and it goes up then it'd be an issue?

Highest I've seen is 220, fan kicks on after that

I've seen it drop from 205 to 193 under spirited driving, I'm assuming it's due to increased airflow

Depends on how you're driving, sitting still or driving hard its going to get warm, but would be considerably cooler doing 60 down the interstate. As long as the fan is working and bringing it back down and no warnings on the dash, you're fine.

You're spot on bro. When you are driving and have air flow, you should see around 190 give or take a 5-10 degrees in either direction. When stopped and at idle, you should see it around 210-220, and once it gets over 220 the fan will kick on and you will see it go back down to around 210 or so. So I would say on average, 215 give or take 5 degrees either way at idle and when moving, 195 give or take 5 degrees either way. This is what I see on my car, it could certainly vary between models and climate. I have a 2010 ZL1 completely stock and it's been about 50 here in Philly lately and this is mostly stop and go traffic conditions I am referring to.
