Anyone ever had this problem? Or is this how it is supposed to be? I finally got it loose, but had to grab the end of it with channel locks to keep the whole bolt from spinning, I'm really naive on things like this lol

It's normal. Hit it with a little PB blaster or WD40 and use a wrench or pliers on the non-threaded part of the stud.
