Exclamation Odd temp readings.

I just recently bought a 1994 Camaro.
Love it, but recently having problems.
I hit a bump pretty hard and it threw my ABS light on, and shortly after, I noticed my temperature starting fluctuating along with a rare check engine light that will come off as soon as the car is restarted.

It normally stayed around the first quarter and between 210, but will climb to 210, go down, and climb back up. Traffic or not.

It recently 'overheated'. Sky rocketed to 260 and I pulled over and popped the hood. No heat coming off, no smell and nothing was hot to touch and all levels were good. After that, it's been acting wild and reaching a bit past 210 and staying.
Thermostat was just replaced, fans work, and no idea what the problem could be.

There's no pattern other than it normally being at around 185 in the morning to work(10 mile drive) and 210 or a bit more on the way home.

Is a sensor to blame?
