what replacement pads should I be looking at for high performance brake pads for both street and track?

If you're going to track you need more than pads. You'll need high performance brake fluid like Super Blue and I would recommend upgrading to steel braided brake lines too.

What kind of "track" and how often?

Carbotech bobcat 1521 compound , far better then comparable pads . Non corrosive dust, good heat range for track useage, and no squeal for the street.

Hawk HPS Pads, Stainless Steel lines, and Motul RBF600 fluid at the very least. You won't be disappointed.

EXACTLY what I wad going to recommend!
We've sold several of these packages, which we call Stage 1.
Stage 2 includes Rotors.
Stage 4+.. you want a BBK

Let me know if I can help you out in any way. I am a huge Hawk Performance brakes fan, I run them on ALL my cars, and recommend them to everyone, even for bone stock cars.
