DIY interior work

Hello all,

I bought a 1968 Camaro SS 350 v8 restomod and was hoping to work on it myself as much as I can. I do not have much experience in doing installs.
I normally have shops do the work since I had one car and couldn't risk dissembling parts and not being able to put it back together. Now that I have a 2nd car, I don't mind taking the risk and would love to do some interior upgrades first.

Are there any manuals, threads elsewhere (yes, i did search a lot but didn't find everything I needed), or if anyone has step by step DIY guides to help I would appreciate it. Thank you !

To do list (Interior):
-AC
-Center Console
-Autometer gauge (does it require any wiring or re-calibration to ECU?)
-Steering wheel change (thinking Grant steering wheel)
-Pedal/clutch change
