You had your JRE tune done from Ted and like stated a good tuner compensates for COT.
Your tune should not have Cat overheat protection taken out.

I agree with those that say if you are 575 or more at the wheels you are going to have a hard time keeping cats on the car.

I killed three sets of HF cats on my CTS-V in about 3,000 miles. Billy Boat replaced them under warranty, and I paid them to make me a mid-section with no cats. I ran it with the cat-less section, then when I had to go through emissions I would put the catted section in, complete a drive cycle, get the emissions test done (every 2 years in Phx.) then put the cat-less section back in.

If you must pass emissions this is the way to do it.

Is there a down side to running cat less loud dont bother me I'm looking for loud what about pitch and tone

For me I liked the catted OEM vs the hollowed out Cats sounded real clean but no choice here wayyy to much power

Why did you put the cats back on? I go through Phoenix emissions without any. As long as your tune is done so a code isn't set you are good to go.
