Dude, my old '83 Lincoln Town Car would do that.
These cars are made for stability at speed. Be careful and choose a good road on a good day with no traffic, but going fast is OK, really. Don't freak, just enjoy. =]

From what little info I found on the topic, the Safety concern is really a business decision. I read somewhere that the tops were simply not tested for the higher top speed of the ZL1 over the SS. It seems to me the convertible has several SS traits. This tells me that GM chose to limit their cost by keeping the convertible within the already analyzed bounds of the SS. We do the same thing where I work.

My 2010 was limited to 155.
You have to tune it out. Now it goes faster than that
