would these tires fit?

a 295/40/20 tire on a 20x10 wheel?

Can't see why they wouldn't, assuming your new 20x10 wheels are the correct offset. That tire is only .79" wider than the stock tire but .6" taller in diameter. Without correction, it will throw off your speedo/odometer by 2.2% (60mph on dash is 61.3mph on road).

Just as a side note, 295/40R20's seem to be more appropriately priced than a 305/35R20 and is likely what I'll be running on the rears when it comes time for new tires.

i dont remember if the stock rear tires are 275/40/20 or 275 35/20 but if they were 305/35/20 would i not have to correct the speedo/odometer?

Stock is 275/40/20. 305/35/20 would slightly shorter than stock (28.7" stock vs. 28.4"). Your speedo would be off by .9% (60mph on speedo is 59.5mph on the road).

Yes the sizing is appropriate enough.. measuring first is always recommended and test fitting.
