My guess would be a bad thermostat or an air pocket if you have done something to the cooling system recently. If you have been driving the car for a couple years and all of a sudden this happens it's not likely an air pocket. If you do a thermostat and break the system open fill from the top radiator hose as well as the radiator cap. Running the car, placing it on an incline, having someone rev it up a bit, squeezing the lower radiator hose, over and over I could not get all the air out until I filled from the top radiator hose then I was good to go. Just yesterday I had an coolant overtemp warning come on, oil temp was as usual and I probed the coolant with the car running hot with the radiator cap off, no reading for coolant temp. The coolant was the normal temp but the sensor did not read the temp in the DIC or on the gauge. I replaced the coolant sensor in the head and after driving a bit it reset and all is well again.

DITTO on previous replies.
First Step =
Do NOT rely on the surge tank dipstick coolant level ...
With engine stone cold, remove the radiator cap and look directly in the radiator to ensure the coolant level is up to the neck.
This is usually the best first step.
