The Eaton is a badass unit. You can beat the crap out of it all day long and it'll still come hard. It's a good investment if you can't afford a 9".

You shouldn't worry about swapping out gears unless you go FI. Even then you can still use them, but hooking up would be a bitch.

Yes. Gauge and mount are two different pieces.
