Yup. Clutch safety bypass is actually a factory feature in my Jeep. When in 4 WD low range I can start it without pressing in the clutch. Logic there is water, mud won't get into the clutch

My A/C never turns on when remote starting with the fob or Onstar app. Even if i had it full blast when turning the car off previously.

Do we have to have the cooled/heated seat options for remote start ON in the settings before heat or A/C will work and fire up on remote start??

I don't believe so but worth a shot. FYI the system will resume whatever climate control setting was engaged when it was shut off. If you are manually turning off climate before you turn off that could be why.

It could be a trick, because in my Dodge it "appears" to be in the last power state before you turned it off, the AC led is lit and the fans are full blast but the compressor does actually kick in and cool until the key is turned or button is pushed.

Mine definitely doesn't work that way. It was quite cool in there after about 3 minutes on a remote start. Granted it had also not been sitting in the sun for hours either.

From this dealer site, it looks to be part of the automatic option, included with the paddle shifters

Here is a clip from my sticker. The remote start IS included when you opt for the A8.

As for the Climate Control. I turn mine on Auto and set the temp where I want it to be (usually 68) before I turn off the car. AC is always going strong when I get in the car after remote start (whether key fob or app).
Have the seats set to turn on but they don't. Have to look into that issue.

This is the first car I have had with a remote start and I admit, I like it. I use it all the time now that I have it. It gives the car a little extra warm up time before I get in. Or cool down time for the interior.
