Go to sunoco or a shell station. Fill a bucket with 87. Pour it all over interior. Really try to soak the seats and get some on the headliner as well. Throw a match in. Game over.

Seriously though take it to some pros, it will be worth the money.

As mentioned earlier, change the cabin air filter. That alone holds a lot of odors. I'd recommend an interior detail, either a professional or attempt yourself. All of the plastics and vinyl will need to be cleaned. A proper, automotive All Purpose Cleaner diluted correctly will make it a little easier. All of the fabric, carpet, mats, and upholstery will need to be cleaned/shampooed. The headliner will need to be addressed as well. Smoke goes up, so a lot will be in the headliner. I DO NOT recommend shampooing, steaming, or saturating the headliner with anything. The best bet is to take a microfiber towel, mist it where it's semi-damp, and wipe the headliner. Turn the towel often or use multiple. Also clean the glass.
Next I would run an ozone machine for an hour or so. A professional detailer 'should' have one, or you can look around for a place that may rent them. The key to these, is the interior has to be DRY, no dressings either. Run the vehicle with the AC on, on the recirculate setting. Let the machine do it's thing....better than new. There are different types of ozone generators, so directions may be different on each on how to use.

Get a box of Arm & Hammer baking soda that is made to go in your refrigerator, it will have a mesh front. Clean all hard surfaces as others have said. Leave the box under a seat for 90 days. Replace the cabin filter also, should do that once a year anyway. I was a 2 pack a day smoker and quit and used the money to buy my Camaro. My DD Cavalier was really bad smelling and this is what I did. It will go away.

Ive heard that you can slice up apples in a bowel and put in your car. Just cut a few in half and put a bowel in front and back and trunk and leave in over night. They help take away odors.

And of course the steam cleaning idea at a good detailers

I saw a cabin filter at wally world that had some kind of odor control built in, cant remember if it was arm and hammer or not

No matter what you put in there it will still smell like nicotine and the product that you used to non smokers......kinda like some hotel rooms.
