Hypothetically, With my setup, which had the speed limiter removed, would I still see the 155mph max reached on the DIC? Just curious....

You shouldn't ... I think the three digits are capable of maxing out at 999

There are a few threads on this topic. To summarize them, you will be able to go as fast as the car will go and still have the speedo return the correct speed. For example, if you hit 170, you will see 170 in the display.
