on most older cars and on semi's have a different type of transmission. You have to either double clutch or if your good enough you can feather the throttle and jump it into the next year. Thus the only time you need to push the clutch in is for stopping and starting from a dead stop. Double clutching on a modern car really has no purpose other than to wear your clutch out faster. The less time you have the clutch depressed the longer it will last. Double clutching basically cuts your clutch life in half.

I double clutch in curves, when I want to downshift without the jerking motion, or when I decide to switch to the passing lane all of a sudden.

Just take it up to like 3k rpm, pull it out of gear and try getting to the next gear. If the grinding noise is getting slower then just keep trying, it'll eventually match speed and you'll be able to get it into gear. If the grinding noise is speeding up then you missed the shift and will need to blip the throttle a bit to match engine to tranny speed then it will go into gear. It's easy to figure out, you'll just wear out the dogs in the process and have a sloppier tranny if you don't pick it up quickly!!!! However it will get easier to shift without clutching once you wear them down a bit, lol!!

i like revving the engine before shifting. shifting without the clutch during up-shift is pretty easy.
