I think red calipers with white lettering always stick out on any color ride.

Blue? Red would still be my first choice with large white Brembo decals only. Red looks factory.

Whatever you decide to do just make sure you use a quality brand high temp paint and don't forget to shoot some clear on them after applying the decals especially if they are white.Some guys swear by powdercoating them but I've had no problems with mine chipping,cracking or fading at all. Oh yeah also a good brake cleaner before you start painting. For what it's worth I used VHT brand.
