I'm sure you've got your reasons, but we have a 2 week old in my house and have managed it. The wife has an SUV that we primarily use, but we went out one night in the Camaro. Rear facing baby seat behind passenger seat works, but you have to put the passenger seat all the way up. My 5'11" wife was able to fit still. Not doing any long trips that way, she was a bit squished but it was doable and she is tall.

It was our first and I kept hearing how its one of those things that is so amazing but you'll never know until you do it. It is completely true, literally the most incredible day of my life. And be a man and don't look away and cut that damn cord! Its the miracle of birth! (FYI, I wasn't traumatized at all by watching lol. I was nervous about that hahaha)

We went to our local fire department earlier this week to have our car seats "professionally" installed and the rear-facing seat barely fits. You're absolutely right that the passenger seat needs to be all the way forward and almost upright. Not very comfortable for wifey.
Upside is that we ordered a Cadillac ATS as a lease to replace the Camaro. I look forward to owning maybe a 7th or 8th gen on down the line. Whoah.
