Sounds like a great deal to me!!!!
You can get different tires but anything for a 20 in rim is going to be expensive, but hey you keep the original rims so if it becomes a problem you can always switch back and sell the 20s. If you don't curb them they should still get something close to $1000, so you won't be out much

Yes, you will have to reprogram each time you switch.

I don't believe they are referring to the pressure sensors. They have to recalibrate the car for the different diameter tires so the ABS & Stabilitrak don't spaz out.... Not sure here as I don't know the OD of the 17" tires. You should ask them to remove the speed limiter the car currently has for the 17's as well....

You can only do the reprogramming for the TPMS system yourself. The process is in your manual and if you search here you can find numerous threads with copy/pastes of it in them...

Yeah... the diameter of the 20" tires and the 18" tires are the same. Nothing need to be changed for your speedometer or stabilitrack to work correctly.
To re-program your TPMS sensors go to the setting on the DIC that shows the tire pressure and press the button on the stalk to re-learn. Then let air out of the left front tire until the horn beeps. Then go to the right front tire and let air out until the horn beeps again. Then the right rear tire and finally the left rear tire... after learning all of the sensors it will beep 3 times to let you know it is finished learning. Then check your air pressure in all the tires and add air if you need to. It should only have taken a 2lb change in tire pressure for it to know which tire you were letting air out of, so I guess you could add an extra 2 lbs of air before you mount them so you don't need to take the extra step and recheck them after re-learning the sensors.

For $200, I'd just keep the LS wheels (unless you have absolutely no where to store them).
