I was trying to think about how a production line would work. I would bet that they would organize the activity to at least produce all of the cars from one color at a time. Otherwise they would spend more time changing colors then they would painting.
This is a time when the episode of Ultimate Factories scheduled on the 15th would help. We could learn more about the process!

I don't know how they pick which ones go first, I was just playing because that is how it feels sometimes.  I'm sure they go in order that they were accepted by GM. Don't quote me on that though.
As far as painting I've read that they can switch colors from car to car and not miss a beat.
