Metal cut off disk on a hand held 4” grinder is the best way! Then switch to a grind wheel to smooth the rough edges. Then use a little extreme temp paint and a little artist brush to put a little paint on the bare steel. I did my fronts with 17” skinny’s and used this method on my Brembo pads/ skates. Just take your time because shit gets hot quick when cutting and grinding the pads. Make sure you take the pads off the calipers so you don’t accidentally nab something else other then the pads. Honestly after doing mine and the pads make no noise I think the skates are pointless and you’ll even shave a small amount of weight off without them.
