My Z/28 is stock but always felt the LS7 was meant for headers and full open mandrel bent pipes to the mufflers.

It does have an H pipe, its a small cross over, but it's there.
Yes the exhaust is mandrel bent all the way to the tips.
I can't say whether or not the mufflers are very open but I will say that with my headers and the exhaust flaps open, my car is pretty damned loud.... too loud for parking garages for example.
I can't answer about Cat-backs.... headers (no cats) and the rest of the stock cat-back are enough for me (actually too much since I like to keep the exhaust flaps closed much of the time, may end up putting cats or resonators in to quiet it down a bit).
