+1 Just build it as big as you can afford.

Mine is 28x36 with an 18x10 loft and the vert and SxS still have to be parked next door with mom. I also have a shed the lawn tractor is parked in.

When I do a build, I use the back half of the shop (18x28). That is where the lift would go if I get one. There are two 8'x3' work benches and I stack parts on them in the order they come off the car as well as labeling stuff. 18x28 probably gives more space than needed, but if you ever work on a crew cab truck, probably not.

You need heavy duty shelving to make the most of the space. I got some commercial stuff off CL that worked very well. Tires go on the floor under the shelves and one side is an 18' workbench with old military parts bins that must weigh well over 1000 pounds now that they are full of stuff I can't bear to throw away.
