If you are NA, there are plenty of single disc clutches that will hold 500+whp. Those will be the most cost friendly and leg effort is not much different than stock. If you are thinking of going FI go ahead and get a dual. If you plan on nearing the 1000hp mark, get a triple. I don't think GM makes clutches, so factory units are probably not the way to go, i.e. they just come from Luk or Sachs.
I run a Mantic triple. They have mixed reviews, but mine works well and might be a little overkill for what I'm currently running. I think most guys run McLeod or Monster. I have a Ram single in the vert with a cammed 416 and I like it too.
