Stock thermostats start to open @ 195 degrees. @ 221 degrees f. car should start and run fine, it maybe a different issue. Have any of your ground wires been loosened if yes, check them.

When driving hard wont go above 201 F, yah sure i did burp the air, new water pump, Mercedes coolant Antifreeze50/50, no leaks at all, motorad thermostat, stock headers.
