Definitely not 1 3/4. I would go 1 7/8 min. 2" are faily large and really need to consider what HP level you plan to achieve. Price difference is really negligible between them as well. Heck the 1 3/4 is the same as the 1 7/8 with ARH (American Racing Headers).

Oh and 1 7/8 actually dyno'ed better over 1 3/4 hp and tq on a stock LS3 motor. Call Nick @ ARH youself for the facts when choosing header size. Literally skip 1 3/4 period imo.
