Around me (central florida) there's a place called U Pull and Pay. Basically you bring your own tools to pull the parts, and they put which cars they have lying around online so you can see what they have before you go. They also post the prices online and all prices are the same, I just checked and engines go for $250 with a $25 core.
But if you want to deal with a junkyard, try to make sure the engine will be worth pulling and fixing up. Maybe even look into what you would rather do more, drive the V6 for a while, or just go for for the V8 from the start. If you get a junkyard V8 you'd probably put as much work into it as that V6.
Either way, with the VIN being coded for a V6, you'll pay the insurance of a V6, or at least we can get away with it in florida, we don't have emissions tests, inspections, or anything like that.
