I would go for the V8. If you get the V6, you will always wish you had the V8. If you can't afford the V8, then put off getting a new car and save until you can afford it, it will make you appreciate the car even more than you do now.
That's what I'm doing. If i can't come up with the money for a 2SS, I'll wait until i can, and won't settle for anything less.
