VVT will make more power than the same cam without VVT. Only real issue is getting rid of the DOD lifters as this requires pulling the head so you can replace the 8 lifters. The other 8 are fine ( stock LS7 units )

I'd go for an EPS custom grind though. You get the absolute best tech lobes out there and when you have a custom grind donw it fits your needs and goals EXACTLY rather than an off the shelf cam. Besides its only 25 bucks more
