it doesnt sense higher octane, it just makes repeated calculations based on info from the sensors on the car and start increasing the spark advance till it gets knock, then pulls it back.
my LT1 scanmaster has a setting to show my spark advance and retard, and im usually around 44-47 deg advance.

Spike, just throw some 101 Octane boost in the tank, and hold on!
It's interesting to note, that detonation, "ping", is caused by the explosion of combustion occurring too fast when the piston is still rising in the cylinder to TDC.
Lower octane fuel is actually MORE volatile than higher octane fuel. It burns faster.
Therefore, when we use higher octane fuel, the combustion burn is slower and does not bang down on the rising piston, which is what makes that "ping" sound.
The way ESC (electronic spark control) functions, is it places a piezo-electric microphone on or near the engine block.
This microphone controls feedback 5-volt current. The louder the detonation, the more voltage it sends back to the PCM.
The PCM has parameters burned into NVRAM, that include a complex algorithm of microphone voltage and the correlating reduction or increase in spark timing advance.
The PCM constantly pushes the timing as far as possible with just a little bit of detonation which s the preferred characteristic.
101 Octane Boost or high octane gas allows the PCM to push more timing, and create more horsepower, and efficiency.
It has been shown on Corvette Forum, that premium fuel pays for itself, by providing higher efficiency engine operation, increasing MPG significantly.
