Although the dealer tags are easily removable yourself, as I just got my dealer to remove them.
Vin bit, no need to get fleeced. Dealerships make a lot fo their profit selling these 'goodies'.
Undercoating/rust proofing is a personal choice. I opted for it as they guarantee it for I believe as long as you own your vehicle. As for the paint protection / seat protection I wouldn't bother as it really looks like you can do it yourself or get a detail shop to do these things for way cheaper.
They'll also offer extended warranty, which is pure profit right not for them so they'll really try to push it. After a couple refusals they offered to throw in all of the above for an extra $1400 so I said why not. It is a first year production for a new model so no big w00p!
Finally carefully inspect the area in where your rear spoiler in on your trunk. There is a very well known issue of paint chips, easy enough search will give you all the info you'll want and then some on it and a few more things like fuse pull.
