You have no options but to suffer your punishment. If no front plate is illegal in your state and you had no front plate, the LEO can legally stop and write you up for that, some don't some do.
I don't understand....you were driving your Camaro uninsured??? (They can find that out before they stop you by running your plate.) Insurance was for a Tahoe that was expired?? Not sure why you're hating on the cop. I'd bet he ran your plate, found you were uninsured, used the no front plate for the reason he stopped you, then wrote you up for both.
He probably wouldn't have stopped you for the plate if you were not uninsured.
