After warm up and driving at highway speeds mine reads about 200-205 as well, even in the cold wet Oregon winter. I think that's about normal for the V6.
I once asked a GM rep. about my engine running hot. It was at a Corvette event. He told me that unless the coolant is boiling there is no such thing as "too hot". He said that the hotter the engine runs the better it will perform. At least that was the factory guys take on it.
