I run Mobil 1 in all three of my cars. I change the oil and filter every 3K or one year (whichever comes first) in my camaro, and I change it every 5K for my daily drivers.
GM says a trans fluid replacement isn't neccessary on manual transmissions in my 4th gen camaro, but in 47K miles I've replaced it twice. Once was for convienience because the trans was out for a clutch replacement anyway. The daily drivers are automatics and get changed about every 30K miles.
Rear end fluid has been changed a few times in the camaro, but usually because I had to open it up for a gear or diff change. I wouldn't go more than 20K before changing it.
The way I look at it, changing fluids at lower intervals is piece of mind and insurance.
