If you are not a jaded V8 horsepower junkie, the V6 will provide more than enough power.
If you are planning on racing the car or intend to do thousands of dollars in mods, the V8 might be the way to go.
For a DD/ primary car, especially if you are used to 4 cylinder vehicles, the V6 will have much more power than you are used to.
The V6 responds well to bolt-on mods if you want a bit more power or better sound, and the aftermarket is really starting to come around with the turbo kits if you get bit by the horsepower bug down the road.
For your situation, I think you will be more than happy with the six. I prefer the V8 in most situations but I couldn't justify the increased cost(s) of the V8 over the V6 for the daily driving that my car sees.
Most of the "get the V8" responses are coming from horsepower junkies and guys that wouldn't consider the six in the first place.
