When you flow more air w/o retuning, you are leaning out the mixture - that's what gives you the power gain. The cars typically run a little rich (as a safety margin) from the factory. If you port or change your throttle body, you should definitely get a dyno with a/f measurements to make sure you're not running lean. Lean is very bad.
