If you are set on the Camaro, look at LMR's 8+ month build progression. They used the LSX to get into the 9s', I can't tell you at what point they swapped out the LS3. Lingenfelter is very expensive but is also quality. They changed out the LS3 after about a year for the LS9 and run low 10s'.
Hennessey has some nice packages, they are alittle pricey but they do a complete tear down/rebuild. They still use an LS3 but are not faster than LMR or Lingenfelter because of the LS7/LSX. SLP is probably the cheapest option if you are staying with the LS3 and have a 11.5 second package available. There is an aftermarket cast differential and half shaft swap from G-Force if you have any worries about them snapping.
If your already set on the Mustang, follow Evo Performance's progression in the 2011 Mustang. They did some incredible things in a very short time, I think 8's in under 6 months. There is also JPC, American Muscle, Lethal and Livernois are also great companies.. You have your standard packages from Roush, Steeda, Saleen and SMS.
