Take it to a dyno shop and have them check what's happening inside the fuel system. If it's running lean you want to know about it now before damage is done. If it's not, then for some odd reason your setup is accomplishing something no one else has figured out yet. The results you're reporting are certainly interesting enough to check out and verify. If it's legit, then not only would every V6 owner want this mod but Chevy themselves would be interested in studying what's happening.
