differing views on the definition of performance. asian/german performance is about barreling through a road course, light and nimble. american performance is how fast you can go 0-xxx in a straight line. its only in the last few decades have those lines started to blur.
so typically, you aren't going to see many americans trying to hold onto old japenese or german cars to restore and cruise with, and the same for japan and germany....part availability, general acceptance and pride will keep each continent fixing and restoring their own makes/models with those occasional oddballs that go all out on something from across any pond to be unique and deal with the ridicule of being different.
