You can do that with HPTuners also, but with both the handheld AND computer based tuners, the dealer can tell if the ECM has EVER been flashed(even if it is to return it to the stock tune). So you would need a backup ECM with a handheld as well (if the tamper indicator doesn't exist - thanks for the heads up on that one).

I recommend HPTuners if you have the $$ because the VCM Scanner is worth its weight in gold. It tells you all about any parameter you want in real time, so you know EXACTLY how your engine is running and what needs to be improved upon. Handhelds don't compare when it comes to providing feedback.
