hyd steering draws a parasitic loss off the motor (its normally the third highest energy loss in the car). add to that, the hyd pump press is directly proportional to engine speed (which is why most pumps have an orifice return to keep from overpressurizing). notice while at low speed its harder to turn the wheel than at higher speed? while this is nice for making high speed turns, its also a bad thing because sometimes you dont need to be able to crank the wheel all the way around at 90 mph.

tho a way around that is the SpeedFeel system based off the Diravi system from Cintroen that has an auto centering feature and resistance based on vehicle speed. (so that you dont accidentally crank the wheel all the way around at high speed)
