HDR stands for High Dynamic Range and refers to a process where (usually) 3 shots are taken of the same scene; one for shadows, one for brights, and one "normal" shot for midrange. They are then composited together in a program like Photoshop to give you an image that's full dynamic range; more like what your eye can see.
