I'll second that. GM's gone to great lengths (and they've told us so here) to make sure every ounce of power in these cars goes to moving you forward, not spinning your wheels.

For your question of how easy it is to quickly pass someone when you've been cruising at highway speeds: Quite. I'm not an especially aggressive driver, but in my Grand Am I would be muttering "come on please, a little faster, a little faster" to my car in a situation like that, while in the LT it goes exactly as fast as I ask it to. I haven't yet run into its limits, although since I'm still breaking it in I haven't tried to find them.
