If you plan on building up the V6, get stick. If you plan on leaving it stock, get the auto.
I wouldn't even factor in "learning" stick if you decide to go with it, because I was the worst stick driver and I learned eventually when got my 2SS.
That's just my opinion. If you rode in or drove a V8, keep in mind the V6 can't compare stock.
